WAGYU BEEF INFUSED MEZCAL DEBUTS FROM PAQUERA

We have reported on a range of innovative alcoholic beverages, from mushroom-infused whiskey and whiskey aged in Tabasco barrels to whiskey made from crabs and WhistlePig’s alcohol-free cannabis-infused cocktails. Adding to this list of unique creations, ancestral mezcal producer Paquera has released a limited-edition expression made with Wagyu beef.
To qualify as an ancestral mezcal, the spirit must be crafted entirely using traditional methods like hand or stone milling and food-fired clay pot distilling, without modern equipment or stainless steel. Paquera’s Ancestral Mezcal with Wagyu uses open-range Tajima Wagyu from Arrington Ranch in Twin Bridges, Montana.
The production method for this unique mezcal involves wrapping the Wagyu beef twice in twine and suspending it within clay pots during the initial distillation process. As the mezcal is distilled, the flavours of the Wagyu slowly drip into the clay pot, resulting in an ‘amazing buttery finish’.
