MUSHROOM INFUSED WHISKY TO BE LAUNCHED
We’ve seen a wide array of wild and wonderful whiskies in the past, from an IPA cask finished whisky, to a maple syrup finished whisky.
This one however, is very different! Bearface Canadian Whisky has introduced Matsutake 01, a new whisky with wild Matsutake mushrooms, as part of its first launch in the US Wilderness Series.
This unique whisky gets its inspiration from the rare Matsutake mushroom that is found in Canada’s wild places, adding a special taste that’s popular now called umami.
In Canada, if a drink is called Canadian whisky, Canadian rye whisky, or rye whisky, then it must be stored for at least three years in small wooden containers.
Canadian whisky rules allow adding caramel colour and flavouring, up to 9.09%, which can be wine or a spirit aged for two years in wood.
The first set of the Wilderness Series is a blend called Elementally Aged, mixing French Oak, Sherry Pipes, and Casked Matsutake. They age the casks outside in the Canadian wilderness, where the changing temperatures make the whisky taste more interesting because of the wood it is stored in.
