35ml Hibiki Japanese Harmony
70ml chilled still mineral water (soft profile preferred)
Large ice cube or clear ice block

Method:
Fill a highball glass with ice. Pour Hibiki over the ice and stir gently to chill. Slowly add the chilled water, maintaining the 1:2 ratio. Stir briefly once more and garnish with a citrus twist if desired.

Chateau Grand-Puy Ducasse 2016
Chateau Grand-Puy Ducasse 2016 is a classic Pauillac from an exceptional vintage. This stunning red delivers both finesse and structure in equal measure. It’s a wine that shows the pedigree of a Fifth Growth with ageing potential and depth.
The bouquet is layered and expressive, offering aromas of ripe blackcurrant, cigar box, pencil lead, and violets. Les Pèlerins de Lafon-Rochet 2016
Les Pèlerins is the second wine of Château Lafon-Rochet, offering a more approachable take on the estate’s classic Saint-Estèphe style. The 2016 vintage is a fine example of balance and structure from a superb Bordeaux year.
On the nose, it presents dark berries, cassis, and plum, laced with notes of graphite, cedarwood, and a subtle earthy undertone. The palate is medium-bodied with firm but polished tannins, showing blackcurrant, cherry, and hints of liquorice and spice. A touch of mineral tension and well-integrated oak give it freshness and definition.
The finish is refined and persistent, marked by a savoury edge and restrained power. Drinking well now with a decant, but will continue to evolve nicely over the next few years.

2023 Viña Temprana ‘Old Vines Garnacha’, Campo De Borja DO
The 2023 Viña Temprana ‘Old Vines Garnacha’ is produced by Bodegas Aragonesas, a winery located in the Campo de Borja DO (Denominación de Origen) in Aragón, Spain. Bodegas Aragonesas is renowned for its expertise in cultivating Garnacha (Grenache) grapes, particularly from old vines over 25 years old, which contribute to the wine’s depth and complexity.
The estate’s vineyards are situated at elevations ranging from 1,150 to 1,800 feet, benefiting from calcareous lime soils and a continental climate with Mediterranean influences. This terroir imparts unique characteristics to the grapes, resulting in wines that reflect the region’s rich winemaking heritage.
Bodegas Aragonesas is recognized as a leading producer in the Campo de Borja DO, often referred to as the “Empire of Garnacha” due to the prominence of this grape variety in the region.

The cooperative, originally founded in the early 1920s and renamed in 1987, cultivates vineyards that date back to the 11th century, surrounded by the stunning local tower of Sidoine.
This rosé is crafted from traditional Provençal grape varieties, including Grenache, Cinsault, Syrah, and Carignan. It presents a pale pink hue with delicate aromas of small red fruits and citrus. On the palate, it is fresh and dry, offering soft strawberry fruit and a hint of honeysuckle, finishing with a clean, refreshing note.

2023 Les Coteaux du Rhône Méditerranée Rosé
Produced by La Cave Les Coteaux du Rhône, a historic cooperative founded in 1926 near the medieval village of Sérignan-du-Comtat in the southern Rhône Valley, this elegant rosé showcases the character and sunshine of the Mediterranean.
Crafted from Grenache and Syrah grapes grown near the Rhône River, the wine displays a delicate pale pink colour. On the nose, it offers aromas of rose petals and wild red berries. The palate is light, refreshing, and delicately fruity, finishing with a clean, crisp edge.
With an alcohol content of 12.5%, it’s a perfect choice for warm afternoons or as a food-friendly wine. It pairs wonderfully with shellfish, lean fish, summer salads, light appetisers, or simply enjoyed as an aperitif.
Cave de Lugny Crémant de Bourgogne Brut NV
Crafted from a blend of 45% Chardonnay, 35% Pinot Noir, and 20% Gamay, this Crémant undergoes malolactic fermentation and is matured on its lees for 12 months. The result is a wine with aromas of citrus and apple, complemented by subtle biscuity notes. On the palate, it is generous and slightly creamy, featuring fine bubbles and a crisp finish .
