Last weeks tequila tasting, hosted by the superb Los Catadores de Agave (which means the Agave Tasters) in partnership with Mijenta Tequila, was an extraordinary journey through the artistry, history, and craftsmanship of tequila. The event highlighted the evolution of tequila, its roots in Mexico, and the sustainable practices championed by Mijenta. As we sipped on four different tequilas—Blanco, Reposado, Cristalino, and Añejo—we explored the intricacies of flavor, production, and heritage that make this spirit truly exceptional.
Understanding Tequila: History and Production
The evening began with a fascinating primer on tequila’s origins. Tequila, derived from the Blue Weber agave plant (a member of the lily family), is steeped in centuries of tradition. With over 200 types of agave—120 of which are native to Mexico—it is a spirit that represents the country’s biodiversity and cultural richness.
We learned about pulque, the fermented sap of the agave plant, considered tequila’s predecessor. This ancient drink is often described as a blend of kombucha and beer, sometimes infused with fruits and herbs, showcasing the versatility of agave.
Tequila earned its designation of origin protection in 1974, much like champagne, limiting its production to five Mexican regions. Jalisco remains the epicenter, producing 97% of the world’s tequila, thanks to its optimal climate of hot days and cool nights. These conditions ensure perfect sugar accumulation in the agave, which is critical for high-quality tequila.
Mijenta’s Philosophy and Sustainability
Mijenta Tequila, a relatively young brand at just four years old, has made sustainability its cornerstone. Every aspect of their production reflects an eco-conscious ethos. Their bottles are crafted from recycled glass, while labels are made from agave waste. Most impressively, Mijenta employs natural farming techniques, leaving 10% of their fields to bloom, which sacrifices agave yields but fosters biodiversity and eliminates the need for pesticides and herbicides.
Tasting Notes
Blanco Tequila
Mijenta’s Blanco is a celebration of purity and craftsmanship. The agave hearts are slow-roasted for 13 hours before undergoing a 96-hour fermentation process with a proprietary yeast. After double distillation in pot stills, the tequila rests for two months in copper tanks before bottling at 40% ABV. The result is a vibrant, crisp tequila with notes of fresh agave, citrus, and white pepper. Its smooth finish and clean profile make it an excellent choice for sipping or mixing in cocktails.
Reposado Tequila
Aged in American oak barrels for several months, Mijenta’s Reposado balances the vegetal freshness of agave with richer, warmer notes of caramel, vanilla, and a hint of dried fruit. The oak imparts a subtle spice that enhances its complexity, making it ideal for those who prefer a fuller-bodied tequila.
Cristalino Tequila
The Cristalino, a relatively new category in tequila, stood out for its unique clarity and texture. It starts as an Añejo but undergoes filtration to remove its color while retaining the depth of flavor. Mijenta’s Cristalino impressed with its silky smoothness, offering layers of toffee, tropical fruit, and a touch of minerality. Añejo Tequila
Mijenta’s Añejo is a masterpiece, aged for over a year in a combination of American and French oak barrels. This extended maturation lends the tequila an incredible depth of flavor, with pronounced notes of dark chocolate, roasted nuts, and spiced oak. Its velvety texture and long, luxurious finish make it a true sipping tequila, ideal for special occasions.
