STAUNING’S HØST WHISKY BRINGS A ‘RYE’ SMILE TO DANISH SPIRITS LOVERS!
Stauning whisky, the distillery that started in 2009 has launched their newest core whisky HØST, a blend of their single malt and rye malt whisky. HØST means harvest in Danish and this exquisite whisky reflects the natural beauty of their local terroir, with the season providing the essential Danish grains to make the whisky.
Stauning’s journey is an interesting one, it was started by 9 friends with the intention to use local ingredients to make the finest Danish whisky. Based in Jutland (also the home of Legoland), it is 341km away from Copenhagen and in just 15 years the distillery now produces 800,000 litres of spirit a year. The whisky comes from 24 small direct-fired copper pot stills that need cleaning at the end of each day.
HØST is a delicate, smooth and balanced sipping whisky that is perfect for any whisky drinker. Crafted with a marriage of whiskies aged in American oak and a touch of Port wood, this whisky has been bottled at 40.5%. This is an extremely well balanced whisky that has a smooth and fruity flavour profile, with floral undertones.
Stauning have always done things differently at their distillery. Circumstance dictated their decision to malt all of their requirements at the distillery. The team wanted to use only local barley and rye, but without a large commercial malting nearby, they had to do the process themselves. Traditionally, malting was done bt steeping the grain in a tank, then by spreading it on a floor and turning it with malt shovels. These days, germination usually takes place in large temperature-controlled drums. It is never done like this. At Stauning, the steeping and germination both take place on the floor. This is something that only a few distilleries do, another being Springbank.
